I did not die…

in an horrific accident, contrary to what my lack of updates might have you believe.

What have I been doing?  A lot of writing and organizing then a lot of nothing… sweet, delicious nothing.  Coursework is finished (sort of), teaching assistant work is totally finished until autumn, and I’ve been spending my days for the last few weeks doing sweet fuck all, as the saying goes.  I’ve been doing some light reading, some shopping, some creating, some laundry, some yoga, some entertaining and spending time with friends.  Call it a gift to myself of turning my brain’s setting down from “close to full blast” to “that’s more like it”.   Oh if life could always be this meandering!  I guess that’s what graduate school and retirement are for.

This past weekend my Darling and I were lucky enough to celebrate the marriage of our friends, formerly in Ottawa now residing in Seattle.  My Sweetie shed more than one tear at the ceremony and so did I.  It was so wonderful to see two great people who love each other so much make that commitment to each other and it was an honour to be invited to witness it.  Although we didn’t spend a whole lot of time catching up, it was fantastic to see them and spurred us on to start planning a trip to visit them in the near future.

It was also a long weekend in Canada which meant an extra day of laziness (no big deal for me, mind you) and trying out of new recipes.  Our local soul food eatery, Jean Albert’s, does a cornmeal battered shrimp dish that is really tasty.  My problem is the teeny shrimp you get and for the price I wanted to try a heartier home made version.  After a quick search online, I found Noble Pig’s recipe and gave it a try last night.  Those shrimp were pretty scrumptious!

Below is Noble Pig’s image, but my fellas looked exactly like hers.  I ate nearly all of them unassisted but, as they are fried and I ate them a little late, my tummy was aching and woke me up a few hours later.  Damn this aging thing!!!  Other than eating them too late, I highly recommend trying them out.  I used Bob’s Red Mill organic whole cornmeal and organic whole wheat flour and they were nice and crispy and hearty.  With a little squeeze of fresh lemon and a sprinkling with freshly ground salt and pepper these bad boys are ready to eat.  They never got soggy (as I feared they might) at any time during the process.
